Makes about 3 cups
4 large ripe but firm yellow or white peaches, diced
3 to 4 tablespoons minced red onion
2 large or 3 medium jalapeno peppers, minced
Juice of one lime
2 tablespoons fresh mint, shredded
2 tablespoons fresh ginger, grated
1 teaspoon sugar
Sea salt and freshly ground pepper
1. Place all the ingredients in a medium bowl and toss gently.
2. Set aside to meld the flavors for one hour.
NOTE: Great with pork tenderloin or grilled pork chops.
