Cooking with What's Available fAs we considered what's available at the market this week, we decided to feature eggs. We're fortunate to have eggs from free range chickens from Why Not Farm. Eggs are a good alternate source of protein for any meal of the day.
Here are some things of note for the market this week. - Pebbles Bakery is brining chocolate Easter eggs in addition to their other offerings. - March Farms rejoins us with greens and bakery items. - We do not know if Mockingbird Kitchen and Bar will be at market. - Guest artist - JH Photo Art, photography specializing in pets and animals - Guest artist - SCK Art - original designs and notecards - Community nonprofit - Community Health Network with information on healthy eating For the complete list of vendors, see the participation list below. Spinach and Potato Frittata is our recipe this week. This can be served as a hearty breakfast, satisfying brunch/lunch or a light dinner (leaving room for a yummy dessert!). Clearly it can be adapted to whatever other ingredients you might want to use in place of spinach and potatoes. Think mushrooms, roasted red peppers, sausage, asparagus. The list is endless.
